Pears Coconut Chocolate

Are you up for a wildly tasty dessert? After a week working our butts off between caterings and school we feel we deserve a mid-week treat.

This one has it all. It’s fruity, chocolaty and it has coconut, what more could one wish for?

It’s of our favorite desserts when autumn arrives. The warm, aromatic flavor of marinated pears served with a fresh coconut filling makes a perfect match. Top it off with rich chocolate sauce and you’re in for a truly decadent treat.

Pears Coconut Chocolate

Pears Coconut Chocolate

Serving 4

INGREDIENTS
Pears

4 pears (Williams are our favorite)
6 ½  fl oz. / 200 ml red wine
1.8 oz. / 50 g coconut palm sugar
2 cinnamon stick
2 anise star

Coconut filling
3 ½ fl oz. / 100 ml coconut cream

Meat from 1/2 coconut, peeled

Chocolate
3 ½ oz. / 100 g dark bitter chocolate 70% cocoa butter

3 ½ fl oz. / 100 ml coconut cream

Garnish
2 tablespoons cacao nibs

METHOD
Pears
Cut pears in half, peel and remove seeds. Place in an oven tray.
Mix red wine, palm sugar, cinnamon sticks and anise star. Pour the mixture on top of the pears and let marinate for one hour. Bake in the oven at 340°F / 170°C for 10 minutes. Place pears on a plate and pour the marinade into a small pot. Place the pot on the stove and reduce the marinade to half on medium heat. Pour reduced marinade on the pears.

Filling
Blend coconut meat and coconut cream into a smooth paste.

Chocolate sauce
Melt chocolate together with coconut cream using low heat or a bain-marie.

Serving
Top pear halves with coconut mixture, garnish with chocolate sauce and cocoa nibs. Or try the plating shown in the photo below, with the coconut as a base and top with the pear half.
