Raw Chocolate Fudge

I can’t believe Christmas is only a couple of days away! Surrounded by fields full of flowers, sunshine and warm temperatures I’m not really feeling it, but give me a couple of years of Ibiza and I could certainly get used to it. I can’t say that I’m missing the dark, cold, not to forget endless Swedish winter…at all!

So with a climate confusing me I’m using food to get me into the holiday mood. For me and Kuteer it’s all about the food and having a good time together rather than focusing on decorations or gifts. We find it’s just so much more relaxing and enjoyable that way.

If you’d like to add a sweet treat, this Raw Chocolate Fudge is perfect! It’s so simple and quick to make and it only has a hand-full of ingredients. You won’t regret making these little bites and your friends and family will thank you for it, we bet they’ll even beg you for the recipe. 🙂

This decadent fudge is perfect for serving at holiday gatherings (or why not for New Years Eve?), or even to make as little homemade gifts! Who would turn away a fudge tasting this good?

To get the best nutritional value make sure to use raw ingredients and not the commercial ones. That being said, you can of course use the ingredients you prefer or that you have available. Note that maple syrup is not considered to be a raw product but it’s very high in manganese and zinc, which is beneficial in energy production and immune defense.

Makes about 20 pieces

1 cup / 120 g cacao powder

1 cup / 220 g cacao butter, melted at 42C/85F
1 tablespoon ground vanilla bean
½ cup / 160 g maple syrup
½ teaspoon sea salt

Blend all ingredients until smooth in a high-speed blender.

Pour the mixture into a square baking tray with removable bottom, greased with coconut oil. You can also use a normal baking tray lined with plastic wrap or parchment paper, for easy removal. Spread out until even and place in the freezer to set for about 1-2 hours.

Cut into squares and serve.
