We know, it’s Thursday afternoon and many of you might be longing for the weekend at this point. To cheer you on, we are going to share something special with you. Today is the day for some chocolate extravaganza. Are you ready?
Our latest kitchen experiment is a chocolate mousse. Not the heavy cream, egg and butter kind of mousse. This version is 100% plant-based and raw, sweetened with medjool dates and gets its creaminess from one of our absolute favorite ingredients – avocado. And the best news of all, this recipe takes only 5 minutes to make! You should really try it because we’re quite certain that this mousse will make your heart skip a beat!
Raw Chocolate Mousse
Serves 2
INGREDIENTS
20 almonds
1 medium sized ripe avocado
4 tablespoons raw cacao powder
3-4 medjool dates
1 teaspoon vanilla
A pinch of sea salt
½-¾ cup water
Raspberries for garnishing
METHOD
Grind the almonds into a fine powder in a high speed blender. Add all the other ingredients and blend until smooth. Pour into dessert bowls or glasses and let cool in the fridge before serving. Top with raspberries.

NOTE:
If you want to try this recipe, but don’t have the raw cacao powder on hand, unsweetened cocoa powder is a fine-tasting substitute. The mousse will no longer be strictly raw, but it is still wildly tasty!
