Simple Green Smoothie

I’m sure you’ve noticed that green smoothies are everywhere these days and Kuteer and I thought we would share one of our favorite recipes with you.

A green smoothie is an easy and tasty way to incorporate more greens into your daily life and it’s actually how we started our journey to eat like we do today.

Both of us have been eating vegetarian food since many years. I’m on my 11th year now and Kuteer can’t even remember how long it has been, but somewhere around 30-35 years with few brief “off periods”. That being said, I wouldn’t go so far as to say that we have always been eating super healthy and balanced foods. Probably healthier than many but far from where we are now.

Living in Italy we ate quite a lot of pasta (surprise!), bread, some cheese, mostly cooked food and to be absolutely honest, I would not be very excited at all about a plate of salad. (Kuteer on the other hand, could live on tomatoes, sprouts and lettuce – not kidding!)

After we moved to Sweden I somehow started to read a lot about raw food and got very interested but eating salads was still not very appealing to me. When I heard about green smoothies I thought it would be a great way for us to eat more raw veggies and it actually worked! We would have a green smoothie for breakfast for few weeks and after some time I felt more and more drawn to eat salads and dark leafy greens.

We don’t do green smoothies so often anymore because we’ve moved on to green juices and eating salads every day but every now and then we love us some green creamy deliciousness.

Simple Green Smoothie

Serves 2

INGREDIENTS
1 banana

100 g spinach
Half a medium cucumber (about 150 g)
 Juice of 1 lemon
 Juice of 1 lime
1 cup of almond milk
10 mint leaves
1 medjool date

METHOD
Blend all the ingredients in a high speed blender and serve with a mint leave and a slice of lemon or lime.
